Vineyard Information
This estate syrah was crafted from the Estrella clone grown on two seperate sites. Both sites, picked just 2 days apart, contributed favorable characters unique to each site.
Winemaking & Cellar Information
The grapes were hand-harvested into half-ton bins. While 90% of the clusters were destemmed, 10% whole clusters were placed on the bottom of one-ton fermenters. Following a 36 hour cold soak the fermenters were inoculated with a natural wine yeast and punched down 3 times per day for the duration of fermentation. When dry, the must was bucketed to our small lot basket press, to ensure gently handling during this stage. Following a 24 hour settling period, the young wine was transferred to 90% American oak and 10% French oak, where it remained until the December 2003 bottling.
