After success with a similar blend in 2003, we followed suit and hand-harvested 3.25 tons of Syrah and 1.5 tons of Grenache into small picking bins for delivery to the winery. Winemaking & Cellar Information We combined the two varieties and co-fermented them in a 5-ton open-topped fermentor, following a 72-hour cold-soak with daily punchdowns. After a 12-day fermentation, the wine was pressed off gently in a small basket press, and transferred to barrel after 24 hours of settling. The wine spent 18 months in a selection of primarily French oak barrels, with a small percentage of quality American oak cooperage. Analytical Information Alcohol: 14.4% T.A.: 5.25 g/L pH: 3.73 Brix at Harvest: 24.6 Tasting Notes Medium ruby color, with complex aromas of cured meats, blackberry, and herbs de Provence. Luscious palate feel, with spiced berry and herbal tea flavors that compliment the aromatics.
