While each site contributes something very individual, the result in this final blend is a complex, balanced wine that speaks clearly of its cool-climate origins. Winemaking & Cellar Information The clusters were de-stemmed without crushing, bringing a high proportion of whole berries to the fermentor in an attempt to enhance the black-fruit characteristics in the wine. Fermentations were conducted in small 1½ or 5-ton open-top fermentors, following a 72-hour cold soak period, with punch downs by hand 2-4 times daily, according to the rate of fermentation. The wines were pressed off at dryness using our gentle basket press, with the wine running directly to barrel; about 20% new, and with a small proportion of American oak in the blend. The wine spent 18 months in barrel, prior to bottling in March of 2005. Analytical Information Alcohol: 14.5% T.A.: 5.70 g/L pH: 3.73 Brix at Harvest: 25.1 Tasting Notes Rich, ruby color.
