In some cases, we picked a bit earlier than for the main red wine pick in order to increase the freshness of the resulting wine. Some of the wine came from a saignee of our red wine fermentations. This is a technique where juice is drawn off the red ferment to increase its intensity. It results in a very light juice that makes good rose. The vintage was particularly good for the late ripening varietals that compose this wine. It was an early year with a dry spring and neither rain nor heat damaged any of the fruit. Winemaking & Cellar Information We pressed and fermented the Viognier & Syrah together, producing a very aromatic, peach-colored wine. This was intended to be the base of the rose, but instead became its aromatic high note. Much of the remaining Syrah and the Grenache were from saignees. All of the parts were tank fermented cold to retain aromatics. A portion of the wine was barreled down with its lees for aging in neutral French oak barrels until assembly. The blending of this wine was something we spend tremendous effort on and in the end decided that no single varietal made the best rose which is why it is simply called Rose Wine on the label. Analytical Information Alcohol:14.2% T.A.:6.15g/L pH:3.35 Brix at Harvest:24.2 – 26.4 Tasting Notes The color is, naturally, rose in this wine though it does have a hint of lavender in its hue from the Syrah. Like almost all wines of this type it is quite “grapey” with supporting aromas of plum and peach. There are minor aromas of strawberry and musk melon which create some complexity. The flavors are fresh and cleansing on the palate. There is the slightest hint of a tannin grip which should make it quite nice with food.
