We have a few acres each of Clone 1 and the Musque Clone. Both are on 101-14 rootstock. These vines are on a deep gravelly soil that suits Sauvignon Blanc perfectly. The vines tend to be shy bearing and fairly late to ripen. We are usually waiting for the acid to drop rather than for the sugar to rise when making our picking decisions. We experimented intensively a few years back and discovered that if we removed all the leaves from around the clusters we liked the flavors of the wine better. The sunlight on the fruit reduced the amount of herbaceousness while still leaving the pleasant melon and fig like tones. Winemaking Information One of the most important parts of the winemaking in any white wine is the pressing. The goal is to extract as much juice and flavor from the pulp while leaving the bitter flavors in the skin behind. We use a modification of the “Champagne” method of pressing. This involves low pressure and minimum tumbling of the fruit. Another critical aspect of this method is to utilize press cuts that separate the more desirable low pressure juice from the harsher high press juice. The wine is fermented and aged in stainless steel tanks during its entire time in the cellar. We use yeast especially selected for this varietal. The fermentation is cold, and we block the malolactic ferment. All of these things are done in order to preserve as much freshness as possible. The style of this wine is towards the fresh and herbal. The dominant aromas are of fig and fresh mown hay. There are undertones of honeydew melon. The wine has a crisp mouth feel without being sharp. There is a certain grain or grip to it.
