Vineyard Information
This Estate Pinot Noir was crafted from 11 individual lots that originated from Tolosa’s estate vineyards located in the coastal hills of San Luis Obispo. Each lot was taken from a specific vineyard block, grown according to our highest standards. As a result, these varied blocks contributed their unique characteristics to the final blend’s complexity.
Winemaking & Cellar Information
Grapes from the individual sites were hand-harvested into half-ton bins, then quickly transported to the nearby winery. After a gentle destemming, the resulting “must” was transferred into either 5-ton open-top tanks or 1 ½ ton fermentors. Following a 36-hour cold soak, the fermentors were inoculated with a natural wine yeast and punched down according to the rate of fermentation. When dry, the “marc” was transferred to our small lot basket press to ensure gentle handling during this critical stage. Following a 24-hour settling, the young wine was transferred to 100% French oak, 30% new, where it remained until the September 2004 bottling.

Tasting Notes
Crimson-tinted garnet color. Striking aromas of strawberry and blueberry with rose petal floral aspects. Flavors are perfectly balanced and ripe. Fantastic weight on the palate, with supple middle fruitiness and a chewy, crisp aftertaste to hold all the elements together. For drinking now through 2010.
